Ingredients:
- 1 cup heavy cream
- 1/2 cup powdered sugar
- 1/2 cup lemon juice
- 2 teaspoons lemon zest
- 1 teaspoon gelatin powder
- 2 tablespoons cold water
- Lemon slices and mint leaves for garnish (optional)
Directions:
- In a mixing bowl, whip the heavy cream and powdered sugar together until stiff peaks form. Set aside.
- In a small saucepan, sprinkle gelatin over cold water and let it bloom for 5 minutes.
- Place the saucepan over low heat and stir until the gelatin is completely dissolved. Remove from heat.
- In another bowl, mix together lemon juice and lemon zest.
- Gradually whisk the gelatin mixture into the lemon juice mixture until well combined.
- Gently fold the lemon mixture into the whipped cream until smooth and evenly mixed.
- Divide the mousse into serving glasses or bowls.
- Chill in the refrigerator for at least 2 hours, or until set.
- Garnish with lemon slices and mint leaves before serving, if desired.
