Lemonade Mousse


  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • 1/2 cup lemon juice
  • 2 teaspoons lemon zest
  • 1 teaspoon gelatin powder
  • 2 tablespoons cold water
  • Lemon slices and mint leaves for garnish (optional)


  1. In a mixing bowl, whip the heavy cream and powdered sugar together until stiff peaks form. Set aside.
  2. In a small saucepan, sprinkle gelatin over cold water and let it bloom for 5 minutes.
  3. Place the saucepan over low heat and stir until the gelatin is completely dissolved. Remove from heat.
  4. In another bowl, mix together lemon juice and lemon zest.
  5. Gradually whisk the gelatin mixture into the lemon juice mixture until well combined.
  6. Gently fold the lemon mixture into the whipped cream until smooth and evenly mixed.
  7. Divide the mousse into serving glasses or bowls.
  8. Chill in the refrigerator for at least 2 hours, or until set.
  9. Garnish with lemon slices and mint leaves before serving, if desired.
