● Ingredients:
- 2 cups granulated sugar
- 1 (3 oz) box strawberry-flavored gelatin
- 1 cup unsalted butter, softened
- 4 large eggs, room temperature
- 2 3/4 cups all-purpose flour
- 2 1/2 tsp baking powder
- 1 cup whole milk, room temperature
- 1 tbsp vanilla extract
- 1/2 cup finely chopped fresh strawberries.
●Strawberry Cream Cheese Frosting:
- 1/2 cup unsalted butter, softened
- 1 (8 oz) package of cream cheese, softened
- 3 1/2 cups powdered sugar
- 1/2 cup finely chopped fresh strawberries
● Directions:
1. Preheat the oven to 350°F (175°C). Grease and flour three
8-inch round cake pans.
2. In a large bowl, combine sugar, gelatin, and butter. Beat
with an electric mixer until light and fluffy.
3. Add eggs one at a time, beating well after each addition.
4. In a separate bowl, sift together the flour and baking
powder.
5. Gradually add the flour mixture to the butter mixture,
alternating with milk, beginning and ending with the flour mixture. Beat until
just combined.
6. Stir in vanilla extract and chopped strawberries.
7. Divide the batter evenly among the prepared cake pans.
8. Bake for 25-30 minutes, or until a toothpick inserted
into the center comes out clean. Allow cakes to cool in pans for 10 minutes
before removing to wire racks to cool completely.
9. To make the frosting, beat the butter and cream cheese
together until creamy.
10. Gradually add powdered sugar, beating until light and
fluffy.
11. Stir in chopped strawberries.
12. Frost the cooled cakes, stacking them as you go, and then frost the sides and top of the cake.
